What makes Today Mezcal different from other mezcal brands?
We make two things: traditional Oaxacan mezcal (made by maestros, the real deal) and California agave spirit from Napa Valley (made by us, wine country style). Most brands do one or the other. We do both.
Is the Napa product a mezcal?
No - our Napa product is labeled as a California Agave Spirit to respect mezcal's Denomination of Origin (DO) rules. Only agave spirits produced in specific Mexican regions can legally be called mezcal. Our Heritage line from Oaxaca is authentic mezcal.
What's the difference between your Heritage and Napa lines?
Heritage is traditional Oaxacan mezcal: pit-roasted, tahona-milled, copper-distilled by maestros. Napa is California agave spirit: grown in wine country, fermented carefully, aged in oak. Both premium, totally different approaches.
When will products be available?
We're building this right—which means about 12 months from now. We're currently researching supply chains, planning our Oaxaca trip to partner with maestros, and designing bottles. What will the pricing be?
We're still finalizing pricing based on production costs and supply chain research. We're committed to pricing fairly—enough to support the maestros who make it and create a sustainable product. Founding members will be the first to know final pricing, and we'll share our thought process along the way.
Will you have a tasting room in Napa?
Yes! We're planning Napa Valley's first agave spirits tasting room. Founding members will receive priority invitations to opening tastings and exclusive events. Location and opening date to be announced.
Where do you source your agave?
We're currently on a research trip to Oaxaca to partner with maestros who've been making mezcal for generations—likely working with Espadín agave. For the Napa line, we're exploring California agave growers who use 80% less water than wine grapes. Founding members will get updates as we finalize these partnerships.
Why grow agave instead of wine grapes?
Agave uses 80% less water than wine grapes. California has serious drought problems. Growing crops that need less water just makes sense. You can still make premium spirits - you just don't drain the aquifer to do it.
